Blistered Organic Tomatoes

My daughter often makes blistered tomatoes out of any fresh, organic tomatoes we have. This is a really versatile (and low-carb!) topping for eggs, chicken, fish, steak, lamb, pasta or as a bright side dish.

Any fresh herbs will do (Italian flat-leaf parsley, basil, tarragon, etc.). Tara removes the chunked garlic at the end, which is optional.
