For the past year, I have been cooking and baking part-time in the kitchen of a local assisted living facility.
Our mission in the kitchen is to enhance the health and lives of the residents through our food. Our menus offer many dishes from days gone by that residents fondly remember, such as Waldorf salad, baked rice pudding and liver and onions.
Unfortunately, I now feel the need to resign my part-time position due to the ongoing COVID-19 pandemic: I am considered high-risk due to my age, race, being a diabetic as well as working in a nursing facility. I’ve felt honored to have been of service to the residents and will surely miss working for them.
Here are a few of the colorful salads I’ve prepared for the residents over the past year!
