Breakfast Tortilla Bake

Here is one of my favorite breakfast recipes. This is a very versatile dish, as you can use any vegetables you choose in any amount you choose. In this particular dish pictured I used eggs, cottage cheese, cherry tomatoes, chopped onions, broccoli, olives, fresh basil, grated cheese, and salt and pepper. Once out of the oven, I served it with a sprinkle of dried parsley, Everything Bagel Seasoning, and some hot sauce to give it a bit more oomph! You may recognize this recipe as a similar one that has been traveling around TikTok and Instagram lately.

You can skip the tortilla altogether if you wish, and bake this dish as a frittata. In that case, be sure to grease your pan beforehand.

Breakfast Tortilla Bake

1 large 10″ or 12″ tortilla, I prefer whole grain, spinach, or tomato

3 eggs

2 or 3 tbsp. cottage cheese

a variety of vegetables of your choice

chopped leftover cooked meats of your choice, optional

grated cheese of your choice

salt and pepper

Place the tortilla in a 9″ or 10″ pie plate. Crack 3 eggs into the tortilla and scramble with a fork. Mix in 2 or 3 tbsp cottage cheese. Add in your vegetables and or meats of choice. The vegetables can be raw or cooked, or a combination of the two. Sprinkle with salt and pepper and add grated cheese to evenly cover top (about 1/2 to 1 cup).

Bake in preheated 350 degree oven for about 20 or 25 minutes, until center is set. Remove from oven and let cool for a few minutes. Slice and serve with a sprinkle of Everything Bagel Seasoning and salsa or hot sauce if preferred. A dollop of sour cream or plain yogurt also works.
