When I don’t feel like making custard from scratch, I opt for this quick dessert.
Take a family size, 2.1- oz, box of Zero Sugar, Vanilla Pudding Mix. Make the pudding per package directions. I usually substitute unsweetened almond milk or half whole milk and half unsweetened almond milk for the fat-free milk called for on the package. I also prefer to make my pudding in a blender or Vitamix to avoid any lumps. Refrigerate the pudding.
While the pudding is setting, In a saucepan on top of the stove, make a praline sauce. To the saucepan add:
3 Tbsp. sugar substitute of your choice
2 Tbsp. half & half cream
2 Tbsp. butter
2 Tbsp. sugar-free pancake syrup
1 tsp molasses
Bring to a boil over medium-high heat and let boil for 3 minutes without stirring. Remove from heat and add 1/2 cup toasted, chopped, pecans. Serve the praline sauce on top of the pudding and add a dollop of whipped cream.
This praline can be spooned atop sugar-free ice cream also.
