Here is a quick recipe for instant chocolate pudding when you don’t feel like making it from scratch. Prepare a family size 2.1-oz. box of Zero Sugar Chocolate Pudding Mix, as per the directions on the box. I prefer to substitute unsweetened almond milk, or half dairy milk and half unsweetened almond milk for the nonfat milk called for in the recipe. I also prefer to make my pudding in a blender or Vitamix to avoid any lumps. Cover, refrigerate and let set.
While pudding is setting, toast together some shredded or flaked coconut and some sliced almonds until golden. Remove from oven and let cool. When pudding is set, top with the coconut almond mixture and add a dollop of whipped cream.
