Sugar-Free Black Bean Brownie Recipe With Candied Walnuts

Candied Walnuts

1 cup chopped walnuts

1/4 cup sugar substitute of choice, I used Whey Low D Granular

1 Tbsp. butter

Heat skillet to medium temperature. Add walnuts, sugar substitute and butter. Heat stirring frequently for 5 minutes. Stir until all sugar substitute is melted and nuts are coated. Remove nuts from skillet and lay flat to dry.

Sugar-Free Black Bean Brownie

1/2 cup butter, melted

1/2 cup unsweetened cocoa powder

1 cup sugar-substitute of your choice, I used Whey Low D Granular

3 eggs

2 tsp pure vanilla extract

2/3 cup black bean flour

1/4tsp salt

In medium-sized mixing bowl, combine melted butter and cocoa until dissolved. Add sugar substitute. Add eggs one at a time and beat after each one until combined. Stir in black bean flour and salt and mix just until combined; do not overmix. Pour and spread batter into a greased 9 or 10″ round pie or quiche pan.

Bake in a 350 degree oven for approximately 25 minutes, or until toothpick inserted into center comes out clean. Cool and then unmold, or leave in pan. Top with candied walnuts and dust with erythritol confectioner’s sugar.
