Tres Leche Cake
3/4 c cake flour
3/4 c white whole wheat flour
1 1/2 tsp baking powder
1 c sugar
8 T butter, canola butter or regular Smart Balance spread
5 eggs
1 1/2 tsp vanilla
Combine flours and baking powder and set aside.
With mixer on medium speed, beat sugar and butter or butter substitute, until light and fluffy. Add eggs one at a time, beating well after each addition. Add vanilla. Gently fold in flour mixture; do not overmix. Spread in 9×13-inch pan and bake at 350 degrees approximately 30 minutes.
Pierce warm cake with fork at 1/2-inch intervals. Pour the milk mixture slowly over the cake. The mixture will slowly absorb. Cool the cake completely at room temperature. Cover with plastic wrap and place in refrigerator for several hours or up to 1 day. Right before serving, frost with whipped cream or topping and garnish. Store in refrigerator.
Soaking Syrup
1 c milk
1 3/4 c sugar-free sweetened condensed milk*
1 (5-oz ) can evaporated skim milk
Mix together the three milks.
Topping
1 1/2 c sugar-free whipped cream* or frozen whipped topping, thawed
Garnish
Fruit of your choice such as sliced strawberries, pineapple, peaches, cherries, etc.
